Relaxing + Appetizing Sunday…
It has been pouring some rain all day and its so dull outside it’s a little depressing to look at the streets…but I don’t mind. There is always plenty to do, plenty to write and plenty to enjoy. There is always a plus to rainy in the weekends and more when we are in the peak of hurricane season. Time to pick up a great book, time to re-organize, time to listen to music, time to spend it with the family, time to bake, time to just relax and watch a movie with a cup of noodles. I don’t know why rainy days makes me sleepy and hungry all the time. Maybe our hangouts are a little bit limited, but there is never unlimited space in our stomachs. Recently I made one of my favorite “tapas” to warm up the gathering of friends, and it is one of the simple dishes to make and can be very satisfying. So grab your glass of wine and let the fun begin…

Preparation time: 10 minutes

Ingredients:
2 big tomatoes
½ small onion (thinly diced)
1 Garlic clove (minced)
2 tbsp of white vinegar
½ cup extra virgin olive oil
1tsp of salt
1 qrt cup of thinly minced cilantro
1 large Baggett bread

Method:
Cut the Baggett into ¾ of an inch in rounds
Toast until golden brown
Cut tomatoes into cubes and in a small bowl add onions, cilantro and garlic. Add salt and vinegar and stir well.
Add salt and pepper
Pour the oil while continuing mixing the ingredients
Let it rest in the fridge for 2 hours
Add the mix in top of the toasts 
Serve and Enjoy!
